I have a sweet tooth. Really, it’s incredible how much dessert I’m willing to eat. And I’m not one to guilt myself after I indulge a little, but I do know I could be doing a little better in the health department. So voila! HEALTHY COOKIES!
Not possible, you say? Well just check out this recipe and see for yourself!
You can dress these up or dress these down any way you like. If you just want to use two ingredients: banana and oats, that’s perfectly fine. If you want to add peanut butter, honey, syrup, agave, dried fruit, cocoa powder, chocolate chips, etc, those are all REALLY TASTY options. But for myself, I just used 2 bananas, peanut butter, oats, and agave. (I kept the honey in the picture cause I was contemplating adding it as well).
- Mash 2 bananas in bowl
- Add peanut butter and agave and mix.
- Add oats
- Scoop the wet “dough” onto a sheet of parchment– mold into cookie form
- Place in freezer for at least 2 hours, to harden
- Remove and let thaw, or just eat them cold!
So yummy! *IMPORTANT NOTE: The banana ingredient will start to turn brown after too long, which will make the cookies look/go a little bad. That’s why I only made 5 large cookies–they are only good for about a day or so. But they’re so yummy, and next time I think I will add chocolate chips!
